CAKE DECORATING IS AN ART. I'm passionate if not obsessional about cakes and aim to be at the forefront of cake design. I specialise in bespoke decorated cakes. Taking a lot of care and attention to make sure my cakes taste as good as they look, with over 30 years of tried and tested recipes, they've got to taste good. Every cake I make is bespoke and personal to my client.
ABOUT ME, ANN PALLETT.
I'm very proud of the fact that I was trained in Jersey at Highlands College by the late, great Mr Franz Schindler. He also inspired me to teach and I'm planning to do more of this in the future. I am City and Guilds trained to an advanced level in Pastry. While I was at college I showed at the local Salon Culinaire and Hotel Olympia in London.
Bake me a Cake was a dream that I slowly realised. I did resist for a while knowing that it was going to be very dangerous! home alone with cake! Over the last 20 years cake decorating has evolved enormously and you do have to keep up with new products and techniques.
MY PRODUCT
I was brought up on a dairy farm and I know our dairy produce is the best in the world. In my home kitchen I use a ridiculous amount of creme fraiche in my chocolate cake. Full fat milk makes the most wonderfully fluffy cupcakes. Classic heard buttermilk in my red velvet sponges and rich Jersey butter in my Ganache and butter creams, along with local free range eggs. When ever possible I make my own sugar paste (fondant) and vanilla extract. I also use the finest Belgian chocolate and cocoa powder.

Classes run in March and November at my home kitchen in St Brelade.
