    The oven is the one piece of equipment that does the most work at Luso,
    a restaurant behind the Black Horse Inn on Church Street in Cavan town.
    It is a stone oven, run hot enough to finish a pizza in the time it
    takes to pour a drink, and it is where a dough fermented for roughly
    three days finally gets used.

    That combination, a long ferment and high, direct heat, is what gives
    the base its blistered, uneven crust rather than the flatter, more
    uniform result a slower oven or a same day dough would produce. Pizzas
    come topped with Corleggy parmesan from Belturbet and rocket from along
    the Annalee, among other toppings...
